Something Uniquely New Mexico…

For first time New Mexico visitors, eating at any of our local eateries can be an odd experience. It never fails! I challenge any visitors to order something uniquely New Mexico...Chile. As soon as you place your order, the question from the waiter will be, “Red, Green, or Christmas?” It will take some getting used to. I can recall my first experience at a local eatery, and my answer was “all of the above,” to which the waiter gave me a weird look. Since it was my first time, I wanted to try it all…and just remember you can always get it “on the side.”

It didn’t take me long to decide that “green chile” was my favorite. And frankly, if you are versatile in the kitchen, it can enhance the flavor of any cuisine. That’s right, any cuisine. I have tried green chile with some of my favorite Jamaican cuisines like Curried Chicken, oxtail, stew peas, and mannish water,.

Here are my favorite green Chile Dishes:

  1. Green Chile Burger
  2. Green Chile Enchilada
  3. Green Chile Stew
  4. Green Chile Burrito

Indeed, others prefer red chile but I like Hot Green Chile.

I've always enjoyed my business trips to Albuquerque for the opportunity to enjoy the New Mexico food.  The chilies are everywhere, and so good :)   Bill

            Even though I am from Texas I started eating really spicy food when I lived in New Mexico. There is nothing better than green chile. I love New Mexican food and definitely miss it. Blue corn mmmm!

Yes we love our Chiles especially the green hatch chiles. It is hatch clhile season right now and several of our stores are featuring the chiles. Its not like being in Mew Mexico but then again what is?

Hi Lloyd, I have been to Gallup, New Mexico before however I did not remember the "red, green or christmas" chile dishes in the menu.

Kwee, Chile is to New Mexico as Blue Mountain is to Jamaica.  I am surprised that you did not see it on the menu.  But then again, not all reataurant serve it,  It depende on what cuisine you are having
